Paella de Marisco (seafood paella) is the world's most popular paella recipe. It emerged in its modern version in Spain's Valencian region in the early 1800s. Prior to the 19th century, the ingredients for seafood paella varied greatly with the most unusual being eel.
Okra is a fuzzy, green, ribbed, fibrous seed pod. It is best when two to four inches long. When cut open on the bias, it has rows of tiny seeds and a slimy or sticky texture. When okra is boiled, this slimy property becomes pronounced and is typically reduced by adding acidic ingredients. The okra plant is prolific and easy to grow.
