Moringa salad is a yummy salad from the northern region of Nigeria. It is prepared for special occasions and at home.
Ingredients[edit | edit source]
- Moringa leaves (zogale), washed
- Ground kulikuli (Nigerian peanut snack)
- Stock cube
- Salt
- Scotch bonnet chili pepper, pounded
- Carrot (optional), diced
- Onion, sliced thin
Procedure[edit | edit source]
- Bring a pot of water to a boil. Pour the hot water over the moringa leaves, cover, and let steam.
- Drain the water from the moringa, and place the leaves in a clean dish.
- Combine the kulikuli, stock cube, and a pinch of salt.
- Toss the moringa with the pounded pepper, diced carrot, sliced onion, and kulikuli mixture.
- Serve with fried fish.
